Spice up your winter menus with help from Nanette Davidson, author of The Folk School Cookbook: Seasonal Recipes. This class, the third in a series, covers how to cook legumes using delicious, affordable recipes from around the world. We will explore the qualities of dried beans and lentils and how to soak and spice them for increased digestibility. Mushroom Walnut Burgers, Middle Eastern Medjara, and a pot of indigenous Appalachian Soup Beans with all the fixin’s will be featured on the table. Nanette shares a portfolio of 12 original recipes for this class and the others in the series.

For over twenty-five years Nanette Davidson has been in the kitchen showing adults and children alike the joys of home cooking. She founded the culinary program at The John C Campbell Folk School and recently authored The Folk School Cookbook: Seasonal Recipes from the JCCFS. Her classes include pie-making, wood-fired oven baking, enhancing a plant-based diet, using herbs and edible flowers, traditional Shaker foodways, and preserving and fermenting. She has demonstrated for wine and food festivals, MEN fairs, and farmers markets.
